Spiced with salt and pepper so the pork shines, this is a sausage for true sausage lovers: we use prime shoulder cuts of fresh pork that are coarse-ground and stuffed into natural casings, then gently finished over fruitwood heat to add soft, savory depth without turning it into a “smoked” sausage.
