Made for breakfast but delicious any time of day, this Breakfast Sausage is lightly seasoned with salt, pepper, red chili pepper, and a touch of sage. “Mattinata” means morning in Italian, and we honor that name by using prime cuts of fresh pork, coarse-ground and stuffed into natural casings before a gentle, sweet smoke for a tender, savory bite.

It’s built for the skillet—alongside eggs, folded into hashes, or served with toast—but just as happy in a bun or tucked into grain bowls and simple pastas when you want that breakfast feeling to follow you into the rest of the day.
