Our Salame Rosa is a salame cotto (cooked salame), tracing its origins back to Bologna, Italy. We take prime shoulder cuts and coarsely chop the meat for a distinctive mosaic look, then season with coriander, white pepper, and mace, stud with pistachios, and slow-roast with just a hint of natural fruitwood smoke. It’s one of those meats that makes you wonder where it’s been your whole life.
Equally at home in sandos, on boards, breaded and pan-fried, or sliced into olive and pasta salads—any crusty-bread situation where you want big flavor and texture in every bite.
