MORTADELLA & EGG BAGEL SANDWICH
Fra’ Mani Mortadella, thinly sliced
1 egg, fried
Everything Montreal-style bagel
In a small bowl, whisk together some room temperature butter and mustard. Heat a non-stick pan to medium and lightly cook the thinly sliced Fra’ Mani Mortadella, turning frequently until just crisp, about 2 minutes. Set mortadella aside.
Slice a bagel in half and toast until golden brown. Spread the mustard butter over both sides of the bagel. In the same non-stick pan over medium-low heat, fry an egg in a tablespoon of olive oil, covering the pan with a lid to cook the egg whites fully.
Carefully flip the egg to cook the sunny side if you prefer an over-easy egg. Otherwise, transfer the fried egg to the bottom bagel half, add the mortadella and arugula, and gently close the bagel sandwich with the top half.
