MATTINATA BREAKFAST WRAP
Fra’ Mani Mattinata Breakfast Sausage
3 eggs, scrambled
Green onion, sliced
Yukon gold potatoes, diced
Cheddar cheese, grated
In a large pan or skillet over medium heat, add the diced potatoes with a few tablespoons of water. Cover the pan and let the potatoes steam and cook through for about 5 minutes or until fork tender.
Remove the lid and toss the potatoes well, increasing the heat if necessary to allow any excess water to evaporate. Add a drizzle of olive oil over the potatoes and toss frequently until the edges are brown and crisp. Sprinkle a pinch of salt over the potatoes and set aside in a bowl.
Slice the Fra’ Mani Mattinata Breakfast Sausages into halves or quarters, lengthwise. Let cook in the pan on all sides for about 3-5 minutes. Set aside.
In a small non-stick pan, scramble 3 eggs in a tablespoon of melted butter. Warm the flatbread in the larger pan with grated cheddar cheese until melted.
Assemble the burritos by wrapping the sausage, potatoes, green onion, scrambled eggs, and hot sauce in the warm cheesy lavash wrap.
