SWEET BASIL SAUSAGE WITH FENNEL MASH

Ingredients

Fra’ Mani Sweet Basil Smoked Sausages

2 lbs. Yukon Gold potatoes, peeled and cut into 2-inch chunks

1 medium fennel bulb, trimmed, cored, and thinly sliced

4 tablespoons unsalted butter

½ cup half and half

Salt and fresh ground pepper to taste
Directions
Place the potato chunks and sliced fennel into a large pot of cold, lightly salted water. Bring to a boil and cook until the potatoes are fork-tender, about 20 minutes.
Drain the potatoes and fennel thoroughly. Pass the potatoes and fennel through a ricer or the fine blade of a food mill.
Warm the butter and cream until melted and hot. Gradually stir into the mashed potatoes and fennel until smooth and creamy. Hold in a warm oven or bain-marie.
Follow cooking instructions for boiling, then browning the basil sausage in a little olive oil. Serve together with a salad vinaigrette or other sides of your choosing.
