Ingredients

Fra’ Mani Salt & Pepper Smoked Sausages

8 whole eggs
-
1 cup Havarti cheese
-
½ cup Reggiano Parmesan cheese

1 tsp salt
-
¼ tsp freshly ground black pepper

1 medium-sized potato, peeled and diced ½ inch, boiled in lightly salted water until tender (about 5 minutes)

2 tbsp unsalted butter
-
1 medium sized leek, rinsed and diced
-
1 bunch of spinach, cleaned and chopped
Directions
Preheat the oven to 350°F.
In a medium-sized bowl, beat the eggs. Add the sausage slices, cheese, salt, pepper, and cooked potato dice.
Melt the butter in a seasoned steel or non-stick pan. Add the diced leek and soften it over medium heat, adding a splash of water to prevent browning.
Add the spinach to the leeks and let wilt. Raise the heat and boil away all the moisture in the pan.
Pour the egg mixture over the leeks and spinach and raise the heat.
When you see the eggs beginning to set at the edges of the pan, transfer the pan to the oven and bake for 10 minutes or until firm to the touch in the center.
Allow to cool 5 minutes in the pan and turn out to a large plate, top side up with the help of spatula. Eat while warm.
