BRUSSELS WITH ITALIAN SAUSAGE AND PICKLED ONIONS

Ingredients

Fra’ Mani Spicy Italian Smoked Sausage, sliced into thin coins

1.5 lbs brussels sprouts, trimmed and cut in half

1 small red onion, peeled and sliced thinly

1 small bunch flat leaf parsley, rough chopped

2 tbsp red wine vinegar

salt and pepper to taste
Directions
Place red onion in a container with red wine vinegar, salt and pepper and shake for 30 seconds. Set aside.
Heat 1 tbsp olive oil in a large pan over medium heat.
Add sausage and cook until coins begin to cup and crisp around the edges. Remove from pan and set aside.
Add 1 tbsp of oil to pan and brown brussels, making sure to crisp up the flat sides and move often.
Add sausage back into pan, stir to combine, and remove from heat. Stir in pickled onions, remaining vinegar, and fresh parsley.
