SALT & PEPPER SAUSAGE, SAGE, & BROWN BUTTER PASTA

Ingredients

Fra’ Mani Salt & Pepper Smoked Sausage, coarse chopped

1 lb your favorite pasta (we used Gigli)

4 tbsp unsalted butter

12 large sage leaves, coarsely chopped

½ cup grated Reggiano Parmigiano cheese

Black pepper and salt to taste
Directions
Bring a pot of lightly salted water to the boil. Cook the pasta per instructions on the label.
Add the sausage and the sage, and cook without browning over medium-high heat until fragrant.
Raise the heat and add the remaining 3 tablespoons of butter. Allow it to sizzle and brown.
Drain quickly retaining some of the cooking water and add the pasta to the pan. Toss with half of the cheese (1/4 cup), correct with salt and pepper to taste.
Serve in warm bowls. Sprinkle the remaining cheese over the top of each bowl.
