ROASTED SAUSAGES WITH TOMATOES AND GARLIC

Ingredients

Fra’ Mani Sweet Basil Smoked Sausage

2 pints cherry tomatoes

4 sourdough bread slices, toasted or grilled

½ cup pesto
-
4-6 lage garlic cloves, finely diced

2 shallots, sliced

½ cup dry white wine

¼ cup olive oil
Directions
Preheat the oven to 350°F.
in a large, oven-safe skillet, brown sausages according to directions and set aside.
In the same pan, add olive oil, tomatoes, garlic, and shallots and cook over medium heat for 10 minutes, stirring often.
When tomatoes begin to burst, add white wine, and sausages again.
Transfer to oven and cook for 10-15 minutes.
Serve in a bowl on grilled or toasted bread with freshly cracked black pepper, and dollops of pesto to taste.
