Ingredients

Fra’ Mani Rosemary Ham, thinly sliced

2 slices of rustic sourdough bread

Homemade mayo
-
Parmesan cheese, shaved

Reggiano cheese, finely grated

Havarti cheese, sliced

Oil cured tomatoes, chopped
Directions
Preheat a panini press to medium heat and grease the surface very lightly with cooking spray. Evenly spread homemade mayonnaise over both sides of both slices of bread.
Gently press a layer of grated reggiano cheese into the slice of bread that will become the bottom exterior of the sandwich. Place this slice of bread parmesan cheese side down onto the panini press.
Build the sandwich directly on the press with layers of havarti cheese, parmesan cheese, Fra’ Mani Rosemary Ham slices, and chopped oil cured tomatoes.
Top with the other slice of bread and immediately sprinkle a layer of reggiano cheese over the top and edges of the bread, pressing down gently with your fingers to adhere.
Carefully close the panini press and grill until the top cheese layer is crisp and deeply golden brown grill marks appear on the bread. Serve immediately.
